Combine Ingredients
In a mixing bowl, combine the Castelvetrano olives, orange peel, smashed garlic cloves, fresh thyme leaves, red pepper flakes, salt, and black pepper.

Add Olive Oil
Pour the olive oil over the olive mixture and stir gently to ensure all ingredients are well coated.

Marinate
Cover the bowl with plastic wrap or transfer the mixture to a jar with a lid. Let the olives marinate at room temperature for at least 1 hour, or preferably in the refrigerator overnight for enhanced flavor.
