    Boil the Eggs

    Place the eggs in a pot and cover them with cold water. Bring to a boil over medium heat. Once boiling, cover the pot, remove it from the heat, and let it sit for 12 minutes.

    Prepare the Lardons

    In a skillet over medium heat, cook the bacon lardons until crispy. Remove and drain on paper towels.

    Caramelize the Onions

    In the same skillet, add sliced onions and cook over low heat until they are golden and caramelized, about 15-20 minutes. Stir occasionally.

    Prepare the Filling

    Once the eggs are done, cool them in ice water, then peel and cut them in half. Remove the yolks and place them in a bowl. Mash the yolks with mayonnaise, Dijon mustard, salt, and black pepper until smooth.

    Combine Ingredients

    Fold in the caramelized onions and half of the crispy bacon lardons into the yolk mixture. Adjust seasoning if necessary.

    Fill the Eggs

    Spoon or pipe the yolk mixture back into the egg whites. Top with remaining bacon lardons and sprinkle with chopped chives.

    Chill in the refrigerator for at least 30 minutes before serving for best flavor.
