Preparing the French Toast

Step 1: Make the Custard

In a large bowl, whisk together eggs, heavy cream, milk, vanilla extract, granulated sugar, and cinnamon until well combined.

Dip each slice of brioche into the custard mixture, ensuring both sides are well coated. Let them soak for about 5 minutes.

Step 3: Cook the French Toast

In a large skillet, melt 2 tablespoons of butter over medium heat. Cook the soaked brioche slices for about 3-4 minutes on each side or until golden brown. Repeat with remaining slices, adding more butter as needed.

Step 4: Add Brown Sugar

Sprinkle brown sugar on top of each slice and use a kitchen torch to caramelize the sugar until bubbly and golden.

Making the Berry Compôte

Step 1: Cook the Berries

In a medium saucepan over medium heat, combine mixed berries, granulated sugar, and lemon juice. Cook for about 5-7 minutes until the berries break down and the mixture thickens slightly.

Remove from heat and let cool slightly before serving over the crème brûlée French toast.
