Prepare the batter

In a saucepan, combine the chickpea flour, water, salt, black pepper, and cayenne pepper. Whisk until smooth.

Cook the batter

Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and pulls away from the sides, about 5-7 minutes.

Set the batter

Pour the thickened batter into a greased 8x8 inch baking dish and spread it evenly. Let it cool for about 30 minutes.

Cut and fry

Once cooled, cut the set batter into fries. Heat olive oil in a large skillet over medium-high heat and fry the chickpea fries until golden and crispy on all sides, about 3-4 minutes per side.

Garnish

Remove from the skillet and sprinkle with fresh parsley before serving.

Mix the sauce

In a small bowl, combine the mayonnaise, harissa, lemon juice, garlic powder, and salt. Mix well until smooth.

Serve the chickpea fries hot with the harissa-mayo dipping sauce on the side.
