Instructions for Preparing Chicken Liver Mousse

Prepare the Chicken Livers

Clean the chicken livers by removing any connective tissue and fat. Rinse them under cold water and pat dry.

Sauté Aromatics

In a skillet over medium heat, melt 50 grams of the unsalted butter. Add the chopped shallots and minced garlic, and sauté until soft and translucent.

Cook Chicken Livers

Add the cleaned chicken livers to the skillet and cook for about 5-7 minutes until they are browned on the outside but still slightly pink on the inside. Add the brandy and cook for an additional 2 minutes.

Blend the Mixture

Transfer the chicken liver mixture to a food processor. Add the remaining butter, heavy cream, thyme, salt, and black pepper. Blend until smooth and creamy.

Chill the Mousse

Transfer the mousse to a serving dish or individual ramekins. Cover and refrigerate for at least 2 hours to set.

Serve

Serve the chicken liver mousse with seasonal jam and slices of fresh baguette.
