Prepare the Frites

Peel and cut the potatoes into thin strips. Rinse under cold water and pat dry.

Fry Potatoes

Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt to taste.

Make the Burger Patty

In a bowl, combine ground beef, salt, and black pepper. Form into two patties.

Cook the Burger

Heat a skillet over medium-high heat. Add the foie gras and sear for about 1-2 minutes on each side until browned. Remove and set aside. In the same skillet, cook the burger patties for about 4 minutes on one side, then flip.

Add Cheese

Place brie cheese on top of the patties and cover the skillet to melt the cheese, about 2 minutes.

Assemble the Burger

Toast the burger buns lightly. On the bottom bun, place the burger patty with melted brie, add a generous spoon of onion confiture, and top with fresh parsley. Cap with the top bun.

Serve

Serve the assembled burger with a side of crispy frites.
