Prepare Tuna Filling

Open the canned tuna and drain thoroughly. Transfer tuna to a medium mixing bowl and use a fork to flake into small pieces.

Add mayonnaise, Greek yogurt (if using), and Dijon mustard to the flaked tuna. Stir until combined and creamy.

Fold in diced green chiles, red onion, celery, chopped cilantro, lime juice, salt, and black pepper. Taste and adjust seasoning — add more chiles or hot sauce if you prefer more heat. Set the tuna filling aside.
Assemble Sandwiches

Lay out 4 slices of bread. Divide the tuna mixture evenly among them, spreading it to cover each slice but leaving a small border around edges to prevent overflow during grilling.

Evenly sprinkle shredded cheddar and Monterey Jack (if using) over the tuna on each slice. Add optional toppings if desired: one or two tomato slices or a few pickled jalapeños for extra tang/spice.

Grill Sandwiches

Heat a large skillet or griddle over medium heat. While it warms, spread butter evenly on the outer sides of each sandwich (both top and bottom).
