Preparing the Marinara Sauce

Heat the Olive Oil

In a medium saucepan, heat the olive oil over medium heat.

Sauté Garlic

Add minced garlic cloves and sauté for about 1 minute until fragrant.

Add Tomatoes and Seasonings

Pour in the canned crushed tomatoes, and add oregano, salt, black pepper, and sugar.

Simmer

Stir well and let the sauce simmer on low heat for about 15 minutes, stirring occasionally.

Add Basil

Stir in fresh basil leaves just before serving to enhance the flavor.

Preparing the Calamari

Prepare the Oil

In a large pot or deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Mix Dry Ingredients

In a bowl, combine flour, cornstarch, salt, black pepper, garlic powder, and paprika.

Prepare Egg Wash

In a separate bowl, beat the eggs until well combined.

Coat the Calamari

Dip each calamari ring into the flour mixture, then the egg wash, and finally coat with panko breadcrumbs.

Fry the Calamari

Carefully place the coated calamari rings into the hot oil, frying them in batches for about 2-3 minutes until golden brown and crispy.

Drain Excess Oil

Remove the fried calamari from the oil and drain on paper towels to absorb excess oil.

Serve the crispy calamari hot with the marinara sauce on the side.
