Method

Cake Preparation

1

Preheat the Oven

Preheat your oven to 425°F (220°C) to ensure it's hot enough for baking the cakes.

2

Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a double boiler or in the microwave in 30-second intervals, stirring until smooth.

3

Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is pale and slightly thickened.

4

Combine Mixtures

Gradually pour the melted chocolate and butter mixture into the egg mixture while stirring continuously until fully combined.

5

Add Dry Ingredients

Sift in the all-purpose flour, vanilla extract, and a pinch of salt. Gently fold the dry ingredients into the chocolate mixture until just combined. Be careful not to overmix.

6

Prepare Ramekins

Grease four ramekins with butter and lightly dust them with flour to prevent sticking. Tap out any excess flour.

7

Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

8

Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be firm, but the center should still be soft.

9

Cool and Serve

Let the cakes cool for 1 minute before carefully inverting them onto individual plates. Serve immediately with a scoop of vanilla ice cream.
