Assemble vegetables

In a medium bowl, combine 0.5 cups rinsed chickpeas, 0.25 cup diced cucumber, 0.25 cup quartered cherry tomatoes, 0.125 cup finely diced red bell pepper, 1 tablespoon very finely diced red onion and 6 halved kalamata olives.

Make dressing and toss

Whisk together 1 teaspoon olive oil, 1 teaspoon fresh lemon juice, 0.5 teaspoon red wine vinegar, 0.125 teaspoon dried oregano, 0.125 teaspoon salt and 0.0625 teaspoon black pepper. Pour dressing over chickpea mixture and toss gently until evenly coated.

Finish

Fold in 1 tablespoon crumbled feta and 1 teaspoon chopped parsley. Taste and adjust seasoning if desired. Keep chilled while preparing the other salad (can be made up to 2 hours ahead).

Kale Caesar Salad (half portion)

Massage kale

Place 1 cup chopped curly kale in a bowl. Add 0.5 teaspoon lemon juice and 1 teaspoon olive oil. With clean hands, massage the kale for 1–2 minutes until leaves soften and darken.

Make quick Caesar dressing

In a small bowl, whisk together 0.5 teaspoon mayonnaise (or Greek yogurt), 0.25 teaspoon Dijon mustard, 0.25 teaspoon minced garlic, 0.125 teaspoon Worcestershire sauce, 0.5 teaspoon lemon juice, 0.0625 teaspoon salt and 0.0625 teaspoon black pepper until smooth.

Toss salad

Drizzle the dressing over the massaged kale, add 1 tablespoon grated Parmesan and 2 tablespoons croutons. Toss gently to coat. Adjust seasoning to taste. Keep at room temperature briefly before plating.

Plate assembly and finishing

On a wide dinner plate, lay down 0.5 cup mixed baby greens in the center as a light bed and visual divider.

Arrange the Mediterranean Chickpea Salad on one side of the bed and the Kale Caesar Salad on the other side, each occupying roughly a half-plate. Use a spoon to mound each salad neatly so their flavors stay distinct.

Drizzle 0.5 teaspoon olive oil lightly over the whole plate, add a lemon wedge at the edge, and finish with a few cracks of freshly ground black pepper to taste.

Serve immediately for best texture (dine-in). Note: both half-salads can be prepared ahead and assembled to order.
