Method
Base (Custard Ice Cream)
Warm milk and cream
In a medium saucepan combine 2 cups whole milk, 1 cup heavy cream, 3 tablespoons granulated sugar, and 1 tablespoon invert sugar or light corn syrup. Warm over medium heat, stirring occasionally, until the mixture is steaming and small bubbles form at the edges but not boiling (about 170–180°F / 77–82°C).
Whisk yolks and temper
While the milk mixture warms, place 4 large egg yolks in a medium bowl and whisk until smooth. Slowly ladle about 1/3 cup of the hot milk mixture into the yolks while whisking constantly to temper them. Repeat with another 1/3 cup until yolks are warmed and smooth.
Cook custard
Pour the tempered yolk mixture back into the saucepan with the remaining milk mixture. Cook over low to medium-low heat, stirring constantly with a spatula or wooden spoon, scraping the bottom, until the custard thickens enough to coat the back of the spoon (170–175°F / 77–79°C, or 8–10 minutes). Do not let it boil or the eggs will scramble.
Strain and chill
Remove the pan from heat and immediately stir in 1 teaspoon fine sea salt and 1 teaspoon pure vanilla extract. Pour the custard through a fine mesh sieve into a clean bowl to remove any cooked bits. Cool to room temperature, then cover and refrigerate until thoroughly chilled, at least 3 hours or overnight for best texture.
Churn
Once chilled, churn the custard in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency (usually 20–30 minutes). If you don't have a machine, freeze the custard in a shallow metal pan, stirring vigorously every 20–30 minutes to break up ice crystals until smooth and scoopable (about 3–4 hours).
Mix-ins & Finishes
Prepare mix-ins
While the ice cream churns, prepare any mix-ins: chop 1/2 cup dark chocolate into small pieces, roughly chop 1/2 cup roasted nuts, or warm 1/4 cup caramel sauce slightly so it is pourable. If using fruit compote, have 1/2 cup cooled and ready.
Fold in mix-ins
When the ice cream reaches soft-serve stage, gently fold in chosen mix-ins in batches to distribute evenly without melting the ice cream: for chocolate or nuts, fold in about 1/2 cup total; for ribbons (caramel or fruit), layer them as you spoon into cups to create swirls.
Assembly & Serving
Portion into 8-oz cups
Spoon the ice cream into six 8-oz cups, filling each to the rim. If adding a sauce ribbon, spoon a small amount into the bottom of each cup, add ice cream, then top with additional sauce and a sprinkle of sea salt flakes (about 1/8 tsp per cup) or chopped nuts as desired.
Harden (optional) and store
If you want firmer texture for transport or holding, put filled cups in the freezer for 1–2 hours to harden. Cap with lids if available and store in the freezer for up to 2 weeks for best quality. Let cups sit at room temperature 5 minutes before serving for easier scooping.
