Method
Dumpling Filling
Place ground pork in a medium bowl. Add chopped shiitake mushrooms, green onions, grated ginger and minced garlic.
Add light soy sauce, sesame oil, Shaoxing wine, white pepper, and 1 tsp salt. Mix briefly to combine.
Dissolve cornstarch in 1 tablespoon water to make a slurry; add to the mixture along with remaining 2 tsp salt. Mix vigorously in one direction until mixture is sticky and cohesive (about 1–2 minutes). This helps create a moist, tender filling.
Cover bowl and refrigerate the filling for 15–30 minutes to let flavors marry and mixture firm slightly for easier wrapping.
Wrappers & Assembly
Lightly dust a work surface with flour. Place one dumpling wrapper on the surface and keep remaining wrappers covered with a damp towel to prevent drying.
Spoon about 1 rounded teaspoon (approximately 12–14 g) of filling into the center of each wrapper. Adjust amount so wrappers can be sealed without overfilling.
Dip your finger in cold water and run it around the edge of the wrapper. Fold the wrapper in half over the filling to form a half-moon and press to seal in the center.
Starting at one side, make 3–5 small pleats on one half of the wrapper and press each pleat against the flat side to form a tight seal (traditional pleated style). Alternatively, simply press edges to seal for a simpler fold. Place finished dumplings on a lightly floured tray, spaced so they do not touch.
Pan-Frying
Heat a large nonstick or well-seasoned skillet over medium-high heat. Add 2 tablespoons neutral oil and swirl to coat the bottom.
Arrange 10–12 dumplings in the skillet in a single layer, flat side down, leaving a little space between each.
Fry undisturbed for 2–3 minutes until bottoms are golden brown and crisp.
Carefully pour 1/2 cup water into the skillet (it will sizzle). Immediately cover with a tight-fitting lid and reduce heat to medium-low. Steam for 5–6 minutes or until the filling is cooked through and wrappers are tender and slightly translucent.
Remove lid and increase heat to medium-high to evaporate any remaining water and re-crisp bottoms, about 1–2 minutes. Transfer dumplings to a plate and keep warm. Repeat with remaining dumplings in batches.
Ginger Vinegar Sauce
While dumplings are resting, combine 1/2 cup black rice vinegar, julienned ginger, 1 teaspoon light soy sauce, 1/2 teaspoon sesame oil and 1/2 teaspoon sugar in a small bowl. Stir until sugar dissolves.
Taste and adjust: add more sugar if too tart, or a dash more soy if you want saltiness. If you like heat, stir in red pepper flakes.
Let the sauce sit at room temperature for 5–10 minutes to allow ginger to infuse the vinegar. Stir in sliced green onion just before serving.
To Serve
Plating
Arrange warm crispy dumplings on a serving platter with the ginger vinegar sauce in a small bowl alongside for dipping. Garnish dumplings with extra sliced green onion if desired.
Serve immediately so bottoms remain crisp. Leftover dumplings can be refrigerated for up to 2 days and pan-fried again to re-crisp before serving.
