Prepare oven and pan
Preheat the oven to 350°F (175°C). Lightly butter an 8-inch square baking dish (or similar 2-quart ovenproof dish). Set aside.
Mix dry ingredients
In a medium bowl whisk together 1 cup all-purpose flour, 3 tablespoons granulated sugar, 1 tablespoon unsweetened cocoa powder, 1 teaspoon baking powder, and 1 teaspoon fine salt until evenly combined.
Combine wet ingredients
In a separate small bowl whisk 3 tablespoons whole milk, 1 large egg, 3 tablespoons melted unsalted butter and 1 teaspoon vanilla extract until smooth.
Form batter
Pour the wet mixture into the dry ingredients and stir gently until just combined, scraping the bottom and sides. The batter will be thick. If needed, add up to 1 tablespoon additional milk to bring it to a slightly thicker-than-pancake batter consistency. Spread the batter evenly into the prepared baking dish using an offset spatula or the back of a spoon.
Add hot water for chocolate lift
Sprinkle or drizzle 3 tablespoons hot water evenly over the batter surface to help bloom the cocoa — this improves chocolate flavor and helps create the pudding layer during baking.

Combine sauce dry ingredients
In a small bowl combine 1 cup packed brown sugar and 3 tablespoons unsweetened cocoa powder, whisking to remove lumps.
Create sauce over batter
Evenly sprinkle the brown sugar–cocoa mixture over the batter in the baking dish. Then carefully pour 1 cup boiling water slowly and evenly over the top — do not stir. The browned sugar and cocoa will sink through the batter during baking to form a hot chocolate sauce layer beneath the cake.
Peanut Butter Caramel
Make dry caramel
In a medium heavy-bottomed saucepan combine 1 cup granulated sugar and 3 tablespoons water. Stir gently just to moisten sugar and bring to a simmer over medium heat. Do NOT stir once it starts simmering; swirl the pan occasionally to promote even melting. Watch closely as the sugar melts and turns golden amber, about 6–9 minutes.
Finish caramel with cream and butter
When the sugar reaches a deep amber color, remove the pan from the heat and carefully whisk in 1 cup warmed heavy cream (it will bubble vigorously). Add 4 tablespoons unsalted butter and 1 teaspoon fine sea salt, whisking until smooth and combined. Return briefly to low heat if needed to dissolve any crystals, then remove from heat.
Incorporate peanut butter and vanilla
Whisk in 1 cup creamy peanut butter and 1 teaspoon vanilla extract until the sauce is smooth and glossy. Taste and adjust salt to balance sweetness. Set aside for 10 minutes to thicken slightly; it should remain pourable.
Apply caramel to cake before baking (optional) or serve warm
Option A (bake with caramel topping): If you prefer the caramel integrated, drizzle about 1/2 cup of the peanut butter caramel in a swirl over the batter surface after adding the hot chocolate sauce. Option B (serve with caramel): Reserve the full amount of sauce to warm and pour over individual servings after baking. Both options work — ensure any leftover sauce is kept warm on very low heat, whisking occasionally.
Bake & Finish
Bake the self-saucing pudding cake
Place the baking dish in the preheated 350°F (175°C) oven and bake for 30–35 minutes. The cake top should be set and spring back lightly; a toothpick inserted into the cake layer will come out with a few moist crumbs but not wet batter. The chocolate sauce layer underneath will be liquidy and bubbling.
Rest
Remove from the oven and let the dish rest for 10 minutes. If you reserved peanut butter caramel (Option B), warm it gently while the cake rests.
Portion and garnish
Scoop the cake into 6 portions, making sure to spoon up the hot chocolate sauce from the bottom. Drizzle 2–3 tablespoons of warm peanut butter caramel over each portion (or drizzle the pre-added caramel as-is if baked on top). Sprinkle with 2 tablespoons chopped roasted peanuts per serving (adjust from the 1/2 cup total) and finish with a light sprinkle of sea salt flakes and/or a dusting of cocoa powder or powdered sugar if desired.
Serving suggestion
Serve warm with vanilla ice cream or a dollop of whipped cream to cut the richness. The pudding will keep in the baking dish, covered, for up to 2 days; reheat gently before serving.
