Prepare the Steak

Rub the dry aged bone-in strip steak with olive oil, then season generously with salt, black pepper, and porcini mushroom powder. Let it sit at room temperature for about 30 minutes.

Char the Peppers

While the steak is resting, slice the sweet bell peppers into strips. Heat a grill or pan over medium-high heat and add a little olive oil. Add the pepper strips and cook until charred and tender, about 5-7 minutes. Remove from heat and set aside.

Cook the Steak

Preheat a grill or cast-iron skillet over high heat. Once hot, add the steak and sear for about 4-5 minutes on each side for medium-rare, adjusting time as needed for your desired doneness.

Finish and Serve

Once the steak is cooked to your liking, remove it from the heat and let it rest for about 10 minutes. Slice the steak and serve with the charred sweet peppers on the side. Drizzle with Essenza balsamic vinegar before serving.
