Prepare the Lamb Saddle

Preheat your grill or oven to high heat. Season the lamb saddle with olive oil, salt, and black pepper on both sides.

Grill the Lamb

Place the lamb saddle on the grill or in the oven. Cook for 15-20 minutes, or until the internal temperature reaches 130°F (medium-rare). Let it rest for 10 minutes before slicing.

Char the Cucumber

While the lamb is resting, slice the cucumber into thick rounds. Toss them in olive oil, salt, and pepper. Grill or char them on a pan for about 2-3 minutes on each side until they have grill marks.

Make the Black Garlic Yogurt

In a small bowl, mash the black garlic cloves and mix with Greek yogurt. Add a pinch of salt and black pepper to taste.

Prepare Preserved Lemon

Finely chop the preserved lemon, removing the seeds if necessary. Mix it with fresh mint in a small bowl.

Slice the lamb saddle and serve it on a plate with charred cucumber, a generous dollop of black garlic yogurt, and a sprinkle of the preserved lemon-mint mixture.
