Chill and prepare glass

Chill a highball or Collins glass in the freezer for 5–10 minutes, or fill it with ice water while you prepare ingredients. If using immediately, discard the ice water before assembling.

Prepare citrus: roll the lime and lemon on the countertop with pressure to release juices. Cut half a lime and a quarter lemon (or use slices) as indicated in the ingredients. Reserve one lime wedge for garnish.

Build the drink

Fill the chilled glass about three-quarters full with fresh ice cubes (about 1 cup). Squeeze the juice of the 1/2 lime and 1/4 lemon over the ice, letting the juice fall into the glass. If using simple syrup for a touch of sweetness, add 1/2 teaspoon now.

Pour 12 fl oz of chilled Diet 7UP slowly into the glass over the back of a spoon or down the side to preserve carbonation.

Gently stir once or twice with a bar spoon to combine citrus and soda without flattening it.

Finish & Serve

Garnish the rim with the reserved lime wedge. If using, clap the mint leaves between your palms to release aroma and tuck them into the drink as an optional garnish.

Serve immediately with a straw or stirrer so the soda remains fizzy.
