Marinate the Salmon

In a bowl, combine soy sauce, lime juice, minced garlic, cumin, and black pepper. Add the salmon fillets and marinate for at least 30 minutes.

Prepare the Wonton Shells

Preheat the oven to 375°F (190°C). Arrange wonton wrappers on a baking sheet and lightly spray with cooking spray. Bake for 8-10 minutes until golden and crispy.

Make the Smoked Avocado Mousse

In a blender, combine avocado, lime juice, and a pinch of salt. Blend until smooth and creamy. Adjust seasoning to taste.

Cook the Salmon

Heat a skillet over medium-high heat. Add the marinated salmon and cook for 4-5 minutes per side or until cooked through. Flake the salmon into bite-sized pieces.

Prepare the Gribiche Sauce

In a bowl, mix together chopped hard-boiled eggs, mayonnaise, Dijon mustard, capers, and chopped chives.

Assemble the Tacos

Fill each baked wonton shell with flaked salmon, a dollop of smoked avocado mousse, a spoonful of gribiche sauce, and top with ikura.
