Prepare the Duck Breasts

Score the skin of the duck breasts in a crosshatch pattern, being careful not to cut into the meat. Season both sides with salt and black pepper.

Sear the Duck

In a large skillet, heat olive oil over medium-high heat. Place the duck breasts skin-side down and sear for about 6-8 minutes until the skin is crispy and golden brown. Flip the breasts and cook for an additional 3-4 minutes.

Finish Cooking

Reduce heat to medium-low and add thyme and garlic cloves to the skillet. Cook for another 5-7 minutes, or until the duck reaches your desired doneness. Remove duck from skillet and let it rest.

In the same skillet, add chicken stock, balsamic vinegar, and honey. Bring to a simmer, scraping up any brown bits from the bottom of the pan. Let the sauce reduce for about 5 minutes.
