Prepare the Pasta
Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
Cook the Guanciale
In a large skillet over medium heat, add the guanciale and cook until crispy, about 5-7 minutes. Stir occasionally to ensure even cooking.
Add Garlic and Chili
Add the minced garlic and red chili flakes to the skillet with the guanciale. Cook for an additional 1-2 minutes until the garlic is fragrant but not browned.
Make the Sauce
Add the tomatoes to the skillet and stir to combine. Let the sauce simmer for about 10 minutes, allowing the flavors to meld. If the sauce is too thick, add some reserved pasta water to achieve the desired consistency.
Combine Pasta and Sauce
Add the drained pasta to the skillet with the sauce. Toss well to combine, and season with black pepper to taste.
Serve
Serve the Amatriciana hot, topped with grated Parmesan cheese.
