Preheat and prepare
Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat. If using a baking sheet, lightly oil it or sprinkle with cornmeal.
On a lightly floured surface (use the 2 tbs flour), stretch or roll the pizza dough into a 12–14 inch round. Aim for about 1/4 inch thickness. Transfer the stretched dough to a parchment sheet or oiled baking sheet/pizza peel.
Sauce
In a small bowl combine the tomato pizza sauce with 1 tsp dried oregano and 1 tsp crushed red pepper flakes. Taste and adjust seasoning with a pinch of salt if desired.
Spread the sauce evenly over the dough, leaving a 1/2–3/4 inch border for the crust. Use about 3/4–1 cup of sauce depending on how saucy you like it.
Cheese & Toppings
Evenly scatter 2 cups of the shredded mozzarella over the sauced dough, leaving some for later to create a melty top layer.
Distribute the cooked crumbled Italian sausage in an even layer across the pizza.
Place pepperoni slices evenly over the pizza, spacing them so most slices get coverage (about 24 slices for a 12-inch pizza).
Scatter the sliced green bell pepper, black olives, and mushrooms across the pizza to create a balanced topping spread.
Season the toppings lightly with the 1/2 tsp salt and 1/4 tsp black pepper.
Finish with the remaining 1 cup of shredded mozzarella, distributing so cheese covers most toppings and edges of sauce are visible.
If desired, drizzle a tiny bit of olive oil around the crust edge for extra color.
Slide the pizza (on parchment or peel) onto the preheated pizza stone or place the baking sheet in the oven. Bake at 475°F (245°C) for 10–14 minutes, rotating once halfway, until the crust is golden and cheese is bubbling and beginning to brown in spots.
Once baked, remove the pizza from the oven and let rest for 2–3 minutes. Brush the crust with the remaining 1 tsp olive oil if you didn’t earlier, and scatter fresh basil leaves over the top if using. Allow the pizza to sit 1–2 minutes more, then slice into 8 slices.
