Preheat and prepare

Place a pizza stone or heavy baking sheet on the middle rack of the oven and preheat to 500°F (260°C) for at least 45 minutes. If your oven doesn't reach 500°F, use the highest temperature available and preheat similarly.

If using refrigerated dough, remove it from the fridge 30–45 minutes before stretching so it relaxes. Lightly oil a work surface and your hands with 1 tablespoon olive oil to prevent sticking.

Dust a pizza peel or the back of a baking sheet with semolina or cornmeal. Stretch or roll the dough into a 10–12 inch round (for one large or two smaller slices) to about 1/4 inch thick leaving a slightly thicker edge for the crust.

Sauce & Cheese

Spread 3 tablespoons of pizza sauce evenly over the stretched dough, leaving a 1/2 inch border for the crust.

Sprinkle 1 1/2 cups shredded mozzarella evenly over the sauce. Lightly scatter 2 teaspoons grated Parmesan over the top for extra flavor.

Toppings

Evenly distribute 1/2 cup cooked sausage across the cheese. If you have crumbled sausage, dot it so each slice gets meat; if using sliced cooked sausage, arrange slices in a single layer.

Top with pepperoni slices (about 20, or to cover the pizza) overlapping slightly as desired.

Scatter 1/2 cup thinly sliced green bell pepper and 1/4 cup thinly sliced red onion over the pizza. Sprinkle 1/2 teaspoon crushed red pepper flakes evenly, more or less to taste.

If using fresh basil, tear or fold leaves and set aside to add after baking (to preserve brightness).

Bake & Finish

Carefully slide the prepared pizza from the peel or baking sheet onto the preheated stone or baking sheet in the oven.

Bake at 500°F (260°C) for 6–10 minutes, or until the crust is golden and blistered in spots and the cheese is melted and beginning to brown. Thicker crusts may require up to 12 minutes; monitor closely.

Remove the pizza from the oven using the peel or baking sheet. Let rest 2 minutes, then scatter the reserved fresh basil over the top, if using.

Slice into desired portions (typical slice pizza yields 6–8 slices) and serve hot.
