Preheat

Preheat oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating. If using a baking sheet, lightly oil or line with parchment.

Prepare dough

Stretch or roll the pizza dough to a 12–14 inch round on a lightly floured surface to about 1/4-inch thickness. Transfer to a pizza peel dusted with cornmeal or to the prepared baking sheet. Brush the edge lightly with 1 tablespoon olive oil to help browning.

Sauce

Spread 3 tablespoons pizza sauce evenly over the dough, leaving a 1/2- to 1-inch border for the crust.

Cheese

Evenly sprinkle 1 1/2 cups of the shredded mozzarella over the sauce, reserving about 1/2 cup to finish after toppings for better melt and browning. If using, scatter the 2 tablespoons grated Parmesan lightly over the cheese.

Cook sausage

In a skillet over medium-high heat, crumble and cook the 3 oz of Italian sausage until browned and cooked through, about 5–7 minutes. Drain excess fat and blot with paper towel. Season lightly with a pinch of salt and pepper.

Add pepperoni

Arrange pepperoni slices evenly across the cheese. If you prefer crispier pepperoni, briefly pan-fry slices in the same skillet for 1–2 minutes per side before placing on the pizza.

Prepare vegetables

Toss sliced green pepper, mushrooms, black olives, and optional red onion with 1/8 tsp black pepper and a light pinch of salt to season. Spread them evenly over the cheese and meats so toppings are balanced and not piled too high (this prevents sogginess).

Top & season

Sprinkle the reserved 1/2 cup mozzarella over the toppings to help bind them. Lightly dust the pizza with 1 teaspoon dried oregano and 1/2 teaspoon crushed red pepper flakes (adjust to heat preference).

Bake

Slide the pizza onto the preheated stone or place the baking sheet in the oven. Bake at 475°F (245°C) for 10–14 minutes until crust is golden and cheese is bubbling and slightly browned. Rotate halfway through for even baking.

Rest & slice

Remove pizza from oven and let rest 3–5 minutes to allow cheese to set. If desired, finish with an extra sprinkle of grated Parmesan. Slice into 8 pieces and serve hot.
