Roast and prepare peppers

If using fresh peppers, preheat oven broiler to high or heat a gas burner. Place whole red bell peppers on a baking sheet and roast, turning occasionally, until skin is charred and blistered on all sides (about 12–15 minutes under broiler or directly over flame). Transfer peppers to a bowl and cover with plastic wrap or a plate for 10–15 minutes to steam. Peel off skins, remove stems and seeds, then chop peppers coarsely until you have about 3 cups.

Prepare tomatoes

If using fresh tomatoes, blanch: score an X on bottoms, plunge into boiling water 20–30 seconds, then into an ice bath. Peel, core, and chop tomatoes. If using canned crushed tomatoes, measure 2 cups and proceed.

Sweat onions and garlic

Heat 1 tablespoon olive oil and 2 tablespoons butter in a large skillet or sauté pan over medium heat. Add the finely chopped onion and a pinch of salt. Cook, stirring occasionally, until soft and translucent, about 6–8 minutes. Add the minced garlic and cook 30–60 seconds until fragrant (do not brown).

Cook peppers and tomatoes

Add the chopped roasted peppers to the skillet with the onions and stir to combine. Add the chopped or crushed tomatoes, smoked paprika, optional hot pepper or red pepper flakes, salt and pepper. Reduce heat to medium-low and simmer gently, uncovered, for 12–15 minutes, stirring occasionally, until the mixture thickens and flavors meld. If the mixture seems very watery, sprinkle in the optional tablespoon of flour and cook 2–3 minutes to remove raw flour taste and help thicken.

Finish with dairy

Lower heat to low. Stir in the remaining 1 tablespoon olive oil, the remaining 2 tablespoons butter, and the yogurt until fully combined. Add the crumbled cheese (sheep's cheese, ricotta salata, or feta). If using egg yolks, temper them: beat yolks in a small bowl, ladle 1–2 tablespoons of the hot pepper–tomato mixture into the yolks while whisking to warm, then slowly whisk the tempered yolks back into the main pan. Stir constantly over the lowest heat for 2–3 minutes until glossy and well combined. Do not boil after adding yolks to avoid curdling.

Adjust seasoning and finish

Taste and adjust salt, pepper, and heat. If the fërgesë is too thick, add a splash (1–2 tbs) of water or extra yogurt. If too thin, simmer a few minutes more to reduce. Remove from heat and stir in chopped parsley.

Serve

Transfer the fërgesë to a shallow serving dish. Optionally, dot the top with an extra small pat of butter or sprinkle additional crumbled cheese. Serve warm or at room temperature with fresh crusty bread, pita, or grilled flatbread. Leftovers keep refrigerated for 3–4 days and can be gently reheated over low heat.
