    Prepare shrimp

    Pat the shrimp dry with paper towels. Season evenly with 1 tsp kosher salt and 1/2 tsp black pepper.

    Make batter

    In a medium bowl, beat 1 egg then whisk in 1/2 cup ice-cold water until combined. Add 3/4 cup all-purpose flour and 1/4 cup cornstarch; whisk briefly until just combined — a few small lumps are fine. Do not overmix; keep batter cold for a light crisp coating. If desired, place bowl over another bowl filled with ice to keep cold.

    Heat oil

    Pour about 3–4 cups neutral oil into a deep skillet or pot to a depth of 1.5–2 inches. Heat over medium-high until oil reaches 350°F (175°C). If you don't have a thermometer, test with a small drop of batter — it should sizzle and rise immediately.

    Fry shrimp

    Working in batches (do not overcrowd), dip each shrimp into the batter letting excess drip off, then carefully lower into hot oil. Fry 2–3 minutes per batch, turning if needed, until golden and crisp and shrimp are opaque. Remove with a slotted spoon to a wire rack or paper towel-lined tray to drain. Maintain oil temperature between 330–350°F; adjust heat as needed. Repeat with remaining shrimp.

Miso Sweet Chili Sauce

    Combine sauce ingredients

    While shrimp fry, combine 2 tbs white miso paste, 1/2 cup sweet chili sauce, 1 tbs rice vinegar, 1 tsp soy sauce, 2 tbs honey, 1/2 tsp sesame oil, 1 tsp grated ginger, 1 minced garlic clove, and 1/4 tsp red pepper flakes (optional) in a small saucepan or bowl.

    Heat and emulsify

    If using a saucepan: warm the mixture over low heat, whisking until miso and honey dissolve and the sauce is glossy, about 2–3 minutes. Do not boil. Taste and adjust: add more honey for sweetness, vinegar for brightness, or red pepper flakes for heat. If you prefer, whisk the ingredients in a bowl until smooth (no cooking) — heating helps meld flavors and thin the sauce slightly.

    Toss or glaze shrimp with sauce

    Coat shrimp

    Place fried shrimp in a large bowl. Spoon the warm miso sweet chili sauce over the shrimp (reserve a little sauce for dipping if desired) and gently toss to coat evenly. Alternatively, serve sauce on the side for dipping to keep shrimp extra crispy.

    Garnish and serve

    Transfer shrimp to a serving platter. Sprinkle with thinly sliced scallions and toasted sesame seeds. Serve immediately with lime wedges on the side for squeezing over the shrimp.
