    Pound and season chicken

    If chicken breasts are thick, place each between plastic wrap and gently pound to an even 1/2-inch thickness. Pat dry with paper towel. Rub both sides with 1 tbs olive oil, then evenly season with garlic powder, smoked paprika, 1 tsp kosher salt, and 1/2 tsp black pepper.

    Cook bacon

    In a medium skillet over medium heat, cook bacon slices until crisp, about 6–8 minutes, turning occasionally. Transfer to a paper towel–lined plate to drain and keep warm.

    Cook chicken

    Using the same skillet (drain most bacon fat leaving about 1 tbs; add remaining 0 or additional olive oil if needed), heat over medium-high. Add chicken and cook 4–5 minutes per side until internal temperature reaches 165°F (74°C) and exterior is golden with slight char. Transfer to a cutting board and let rest 5 minutes, then slice thinly or keep whole for sandwich assembly.

Honey Mustard Sauce

    While chicken rests, whisk together 1/2 cup mayonnaise, 2 tbs Dijon mustard, 1 tbs yellow mustard, 3 tbs honey, 1 tsp apple cider vinegar, 1/4 tsp black pepper and 1/4 tsp salt in a small bowl until smooth and glossy. Taste and adjust honey or vinegar to reach desired sweetness/tang. Refrigerate until ready to use.

Sandwich Build

    Prepare produce

    Slice tomato into 1/4-inch thick rounds. Thinly slice the red onion into rings. Rinse and pat dry lettuce leaves.

    Toast buns (optional)

    If using brioche buns and you like them toasted, heat a skillet over medium-low, spread 1/2 tbs butter on each cut side and toast cut sides 1–2 minutes until golden. If using wraps, warm briefly in a dry skillet 10–15 seconds per side so they’re pliable.

    Assemble sandwiches/wraps

    Spread about 2 tbs of honey mustard sauce on both cut sides of each brioche bun (or a generous 2–3 tbs down the center of each wrap). Place a layer of lettuce (2 leaves per sandwich), then 2–3 tomato slices, a few rings of red onion, the sliced chicken breast (or whole breast), and 3 slices of bacon (or divide as desired). Drizzle an additional 1 tbs honey mustard over the chicken if desired. Top with bun top or fold wrap snugly.

    Serve

    Cut sandwiches in half if desired and serve immediately. Provide extra honey mustard on the side.
