Sanitize all brewing equipment including fermenters, bottles, and utensils to ensure a clean brewing environment.

Prepare Your Equipment

In a large brew kettle, heat 5 gallons of filtered water to 160°F (71°C).

Heat the Water

Once the water reaches 160°F, add the 6 cups of Pilsner Malt and 1 cup of Caramel Malt to the kettle. Stir well and maintain the temperature at around 152°F (67°C) for 60 minutes.

Mash the Grains

After the mash, sparge the grains with an additional 3 gallons of hot water to extract the sugars.

Sparging

Bring the wort (liquid extracted from the mash) to a rolling boil.

Bring to a Boil

Add 1 oz of Hallertau Hops to the boiling wort and boil for 60 minutes. Add 0.5 oz of Saaz Hops in the last 15 minutes of the boil.

After the boil, cool the wort quickly using a wort chiller or by placing the kettle in an ice bath until it reaches 70°F (21°C).

Cool the Wort

Transfer the cooled wort to a sanitized fermenter and pitch the Pilsner Yeast by sprinkling it over the surface.

Pitch Yeast

Seal the fermenter with an airlock and allow the beer to ferment at 65-70°F (18-21°C) for about 2 weeks.

Fermentation

After fermentation, dissolve 5 oz of priming sugar in a small amount of water and add it to the beer before bottling to carbonate.

Bottling

Bottle the beer and allow it to carbonate at room temperature for another 2 weeks before chilling.
