Roasted Turkey

Roasted Turkey

Prepare and season

Preheat oven to 325°F (163°C). Remove giblets from the turkey and pat the turkey dry inside and out with paper towels. In a bowl, combine softened butter, chopped rosemary, thyme, sage, minced garlic, kosher salt, and black pepper. Gently loosen the skin over the breast by sliding your hand between the skin and meat; spread about half of the herb butter under the skin over the breast and thighs. Rub remaining butter all over the outside of the turkey. Tuck the wing tips under the bird and truss the legs with kitchen twine. Place onion, carrots, and celery in the bottom of a large roasting pan; drizzle vegetables with olive oil and season lightly with salt and pepper. Set the turkey breast-side up on a rack above the vegetables and pour 1 cup stock into the bottom of the pan.

Roast

Roast the turkey at 325°F (163°C). Estimate 13–15 minutes per pound for an unstuffed turkey (about 2.5–3 hours for a 10–12 lb bird). After the first hour, baste the turkey every 30–45 minutes with pan juices. If the skin is browning too quickly, tent loosely with foil. Roast until an instant-read thermometer inserted into the thickest part of the thigh (not touching bone) reads 165°F (74°C).

Rest and carve

Transfer turkey to a cutting board and tent with foil. Let rest 20–30 minutes before carving to allow juices to redistribute. Reserve pan drippings for gravy (pour off excess fat and keep the drippings and roasted bits). Carve turkey and keep warm for buffet service; arrange on a warmed platter and garnish with chopped parsley and lemon wedges.

Sausage and Herb Stuffing

Preheat oven to 350°F (177°C). In a large skillet over medium heat, cook sausage, breaking it up with a spoon, until browned and cooked through, about 6–8 minutes. Remove sausage with a slotted spoon and set aside, leaving about 1–2 tablespoons of fat in the pan. Add 4 tablespoons butter to the skillet; once melted, add chopped onion and chopped celery and sauté until soft and translucent, about 6–7 minutes. Add chopped parsley, sage, and thyme and cook for 1 minute to release aromas. In a large mixing bowl combine bread cubes, cooked sausage, sautéed vegetables, beaten eggs, chicken stock, salt, and pepper. Stir gently until bread is moistened but not soggy; add more stock if needed. Transfer to a buttered 9x13-inch baking dish, dot the top with remaining butter, cover with foil, and bake for 25 minutes. Remove foil and bake an additional 15–20 minutes until golden on top. Alternatively, loosely fill the turkey cavity with stuffing before roasting and adjust turkey cooking time as needed (use a meat thermometer in the stuffing to ensure it reaches 165°F / 74°C).

Creamy Mashed Potatoes

Place potato chunks in a large pot and cover with cold salted water by 1 inch. Bring to a boil over high heat, then reduce to a simmer and cook until fork-tender, about 15–20 minutes. Drain well and return potatoes to the hot pot to dry for 1–2 minutes. Mash potatoes using a potato masher or ricer. Warm milk and melt butter together and gradually stir into mashed potatoes until smooth and creamy. Fold in sour cream if using. Season with kosher salt and black pepper to taste. Keep warm for buffet by transferring to a covered slow cooker on the warm setting or a warmed chafing dish.

Green Bean Almondine

Bring a large pot of salted water to a boil. Add trimmed green beans and blanch for 3–4 minutes until bright green and just tender. Immediately transfer beans to an ice bath to stop cooking; drain and pat dry. In a large skillet over medium heat, melt 4 tablespoons butter. Add minced garlic and cook 30 seconds until fragrant. Add blanched green beans and toss to coat and heat through, 2–3 minutes. Stir in toasted sliced almonds, lemon zest, salt, and pepper. Taste and adjust seasoning. Transfer to a serving dish and keep warm on the buffet.

Classic Gravy

After removing excess fat from the roasting pan, place the pan on the stovetop over medium heat. Add 2 tablespoons butter if needed and sprinkle flour (about 1/4 cup) over the fat and whisk to make a roux; cook 1–2 minutes without browning. Gradually whisk in warm stock, scraping up browned bits from the pan. Add reserved turkey drippings. Bring to a simmer and cook until thickened, about 5–10 minutes. If gravy is too thick, thin with more stock; if too thin, simmer a bit longer. Strain through a fine-mesh sieve into a gravy boat for a smooth texture. Season with salt and pepper to taste and keep warm for the buffet.

Cranberry Sauce

In a medium saucepan combine fresh cranberries, sugar, and orange juice. Bring to a boil over medium-high heat, stirring occasionally. Reduce heat and simmer until most cranberries have burst and mixture thickens, 10–15 minutes. Stir in orange zest and cinnamon if using. Remove from heat and cool to room temperature; sauce will thicken further as it cools. Transfer to a serving bowl and chill if desired before the buffet.

Dinner Rolls

If using store-bought frozen rolls, bake according to package instructions and keep warm. If using freshly baked rolls, warm in a 300°F (150°C) oven for 5–10 minutes before serving. Arrange rolls in baskets or on platters and brush with melted butter; sprinkle with coarse sea salt if desired.

Buffet Setup & Service

Set up buffet between 11:00 AM and 6:00 PM in a traffic-friendly layout: warm serving dishes, chafing dishes, and platters. Keep hot items (turkey, mashed potatoes, stuffing, gravy, green beans) in covered, heated dishes or on warming trays to maintain safe temperatures. Place cranberry sauce, rolls, and garnishes in accessible spots. Provide serving utensils, plates, napkins, and serving labels. Replenish items as needed and stir mashed potatoes and gravy occasionally to keep texture consistent. Discard any perishable food left out for more than 2 hours at room temperature; for the buffet window up to 6 hours total, rotate smaller batches and restock from hot holding to maintain food safety.
