Method
Bacon & Jalapeño Mix
In a small bowl, combine the cooked chopped bacon, finely diced fresh jalapeños, brown sugar, and smoked paprika. Stir to combine and set aside to cool fully before mixing into the meat.
Burger Patties
Place the ground beef in a mixing bowl. Add kosher salt, black pepper, and Worcestershire sauce. Gently mix with your hands until just combined—do not overwork the meat to keep patties tender.
Divide the mixture into four equal portions and form into patties about 3/4-inch thick, slightly larger than the buns. Press a shallow dimple in the center of each patty to prevent bulging during cooking.
Cook & Melt
Flip the patties and cook another 3 minutes for medium (adjust time ±1–2 minutes for doneness preference). During the last minute of cooking, brush each patty with about 1/2 tablespoon of buffalo sauce, then place a slice of pepper jack cheese on each patty and cover the pan for 30–60 seconds to melt the cheese.
Buns & Sauce
While patties cook, mix the mayonnaise and lemon juice in a small bowl to make a quick tangy mayo. Taste and adjust—add more lemon for brightness or a pinch of salt.
Assemble & Serve
Spread about 1 tablespoon of the tangy mayo on the bottom bun. Place a lettuce leaf and a tomato slice on the bottom bun.
Add the hot pepper jack-topped patty to the bun. Drizzle an additional 1/2–1 tablespoon buffalo sauce over each patty if you want more heat and sauciness. Top with fresh jalapeño rings to taste.
Place the top bun on the burger and serve immediately with extra buffalo sauce on the side.
