Boil water

Bring fresh cold water to a near-boil (about 200°F / 93°C) in a kettle or pot. For 12 oz of brewed coffee, heat approximately 12 oz (adjust for pot loss).

Measure and prepare coffee

Measure 2 tablespoons of freshly ground coffee per 8–12 oz cup (use 2 tbs for a fuller 12 oz cup). Place grounds in your chosen brewer: filter basket (drip), French press, or pour-over cone with filter.

Brew

Pour hot water evenly over the grounds. For pour-over: wet the grounds briefly to bloom for 30 seconds, then continue pouring slowly until you reach 12 oz. For French press: pour all hot water, stir gently, steep 4 minutes, then press. For drip: start the machine and allow it to finish brewing.

Finish and serve

Pour brewed coffee into a mug. Add milk or cream (about 2 tbs) and sugar to taste (about 1 tsp) if desired. Stir with a spoon and serve immediately.

Hot Tea

Boil water

Bring fresh water to a boil. For black tea, use fully boiling water (212°F / 100°C). For green or white tea, let water cool to about 175–185°F (80–85°C) before pouring.

Prepare tea

Place 1 tea bag or 1 teaspoon (per cup) of loose-leaf tea into an infuser or directly into the mug.

Steep

Pour 8 oz of appropriately hot water over the tea. Steep the tea for the recommended time: 3–5 minutes for black tea, 2–3 minutes for green tea, 4–5 minutes for herbal. Adjust steep time for strength preference.

Finish and serve

Remove the tea bag or infuser. Add honey or sugar (about 1 tsp) or a slice of lemon if desired, or 2 tablespoons milk for milk tea. Stir and serve immediately.

Cleanup & Notes

Turn off and empty the kettle. Rinse and wash the mug, brewer, and utensils. Discard used coffee grounds or tea leaves (compost if possible). Store remaining coffee and tea in airtight containers away from light and moisture.
