Heat skillet over medium heat with a teaspoon of oil if needed. Add links and cook, turning occasionally, about 8–10 minutes until evenly browned and cooked through (internal temperature 160°F/71°C). Remove and keep warm.
Hash Browns
While the protein cooks, heat a separate large skillet over medium-high heat and add 2 tablespoons vegetable oil. When oil is shimmering, add the cup of shredded hash browns in an even layer. Press lightly with a spatula. Cook undisturbed for 4–5 minutes until the underside is golden brown. Season with 1/2 tsp salt and 1/8 tsp pepper. Flip in sections (or turn over with spatula) and cook another 3–4 minutes until crisp and cooked through. If using raw grated potato, ensure excess moisture is removed before cooking and cook 6–8 minutes per side.
Eggs
When the protein is nearly done and hash browns are crisping, wipe out or use a clean skillet and reduce heat to medium. Add 1 tablespoon butter and let it foam. Crack 2 eggs into the skillet (for sunny-side up) or crack into a bowl then slide in (for over-easy/medium). Season with 1/4 tsp salt and 1/8 tsp pepper. For sunny-side up: cook 2–3 minutes until whites are set but yolks still runny. For over-easy: cook 2 minutes, gently flip and cook 20–30 seconds more. For scrambled: whisk eggs before pouring, cook while stirring gently until softly set, about 2–3 minutes.
