Method
Hash browns
If using frozen hash browns, thaw slightly or use straight from freezer per package instructions. Heat a large nonstick or cast-iron skillet over medium-high heat and add 1 tablespoon oil or butter.
When oil is hot and shimmering, add the shredded potatoes in an even layer. Press down with a spatula. Let cook undisturbed 4–6 minutes until the underside is deep golden brown.
Vegetables & ham (for eggs)
While hash browns cook, dice onion and green pepper into small, even pieces (about 1/4 cup each). Dice cooked ham to small bite-sized pieces (about 1/2 cup).
Eggs
In a small bowl, crack 2 eggs. Add 2 tablespoons milk or cream, 1 teaspoon salt, and 1/4 teaspoon black pepper. Whisk until fully combined and slightly frothy.
Return the cleaned skillet to medium-low heat and add 1 tablespoon butter. When butter is melted and foaming (but not browned), pour in the egg mixture.
