Cook sausage patties

Heat a 10-inch skillet over medium heat. Add the 2 pork sausage patties and cook 4–5 minutes per side, until internal temperature reaches 160°F (71°C) and exterior is browned. Remove to a plate and keep warm tented with foil.

Place 2 links in a skillet with a splash (1 tsp) of oil over medium heat. Cook, turning occasionally, about 10–12 minutes until browned on all sides and internal temp 160°F (71°C). Remove and keep warm.

OR Cook bacon

Arrange 3 bacon strips in a cold skillet and cook over medium heat, turning occasionally, 8–10 minutes for crispy or 5–7 minutes for chewy. Transfer to paper towels to drain; keep warm.

OR Cook ham

Heat 1 tsp oil or butter in skillet over medium-high heat. Add 1 thick-cut ham slice and sear 2–3 minutes per side until browned and warmed through. Remove and keep warm.

Hash Browns

If using grated potato: after rinsing to remove starch, squeeze in a clean towel to remove moisture. If using thawed frozen shredded hash browns, pat dry with paper towels.

Combine 1 cup prepared hash browns, 2 tbsp diced onion (if using), 1 tsp flour, 1/2 tsp salt and 1/4 tsp pepper in a bowl; toss to combine.

Heat a nonstick or well-seasoned cast-iron skillet over medium-high heat. Add 2 tbsp vegetable oil and swirl to coat. When oil shimmers, spread the hash brown mixture into an even 1/2-inch layer.

Cook undisturbed 4–5 minutes until a golden-brown crust forms. Flip in sections (or slide onto a plate and invert back into pan) and cook another 3–4 minutes until crisp and cooked through. Reduce heat slightly if browning too quickly.

If desired, stir in 1/2 tbsp butter in the last minute for flavor. Transfer hash browns to plate and keep warm.

Eggs

Wipe out the skillet used for protein (leave any brown bits for flavor) and add 1 tablespoon butter. Heat over medium-low to medium so eggs don’t overcook.

Crack 2 large eggs into a small bowl (or directly into the pan) and gently slide into the skillet. For sunny-side-up: cook 2–3 minutes until whites are set but yolks still runny. For over-easy: cook whites until set, gently flip and cook 15–20 seconds more. For over-medium: flip and cook 30–45 seconds. Season with 1/4 tsp salt and 1/8 tsp pepper while cooking.

Remove eggs to the plate with the other warm components.

Toast

Toast 2 slices of bread in a toaster or under a broiler until golden to your preference (about 2–3 minutes).

Spread butter on the hot toast and serve alongside the eggs, hash browns, and chosen protein.

On a plate, arrange the 2 eggs, about 1 cup of hash browns, 2 pieces of the chosen cooked protein (or 1 ham slice), and 2 slices of buttered toast.

Garnish with chopped parsley if desired and serve ketchup and hot sauce on the side.
