Preparation Steps

1

Prepare the Rice and Beans

Cook the rice according to package instructions. Heat the black beans in a saucepan over medium heat until warm.

2

Bread the Tilapia

Preheat the grill. In a bowl, beat the egg and season with salt and pepper. Dip each tilapia fillet in the egg, then coat with breadcrumbs.

3

Grill the Tilapia

Brush the grill with olive oil to prevent sticking. Place the breaded tilapia fillets on the grill and cook for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily.

4

Make the Tequila Caper Sauce

In a small saucepan, combine tequila, capers, and lemon juice. Bring to a simmer and let it cook for about 3-4 minutes until slightly thickened.

5

Assemble the Dish

Serve the grilled tilapia topped with the tequila caper sauce. On the side, serve the cooked black beans and rice. Sprinkle cheddar cheese on the rice and add a dollop of sour cream.
