Mexico City, Mexico (4.4% abv) crisp, full-flavored pilsner

In a large brew kettle, heat 3 gallons of filtered water to 162°F (72°C). Add the Pilsner malt and Carapils malt to the heated water and stir well to prevent clumping. Maintain the temperature at around 150°F (65°C) for 60 minutes.

Prepare the Mash

After mashing, remove the grains by straining and bring the wort to a boil. Once boiling, add the Saaz hops and boil for 60 minutes. After 50 minutes, add the Hallertau hops for the last 10 minutes of the boil.

Boil the Wort

After boiling, rapidly cool the wort to about 70°F (21°C) using a wort chiller or an ice bath.

Cool the Wort

Transfer the cooled wort to a sanitized fermentation vessel and pitch the lager yeast. Seal the vessel with an airlock and ferment at 50°F (10°C) for 2 weeks.

Ferment the Beer

After fermentation, dissolve the corn sugar in 2 cups of boiling water and let it cool. Add this mixture to the fermented beer, then transfer the beer into sanitized bottles and cap them. Allow the beer to carbonate for 2 weeks at room temperature.

Bottle the Beer

After carbonation, chill the bottles in the refrigerator for at least 24 hours before serving. Pour into a glass and enjoy your homemade Modelo Especial!
