In a large brew kettle, heat 5 gallons of filtered water to about 165°F (74°C). Add the pale malt, caramel malt, and flaked oats to the water, stirring gently to avoid clumping.

Prepare the Mash

Maintain the mash temperature at 152°F (67°C) for 60 minutes, allowing the grains to convert starches into fermentable sugars.

Mash Rest

After the mash rest, sparge the grains with hot water to collect the wort. Bring the wort to a boil.

Boil the Wort

Once boiling, add 1 oz of Citra hops and boil for 60 minutes. Add additional hops as follows: 30 minutes into the boil, add 1 oz of Mosaic hops; 15 minutes before the end, add 1 oz of Simcoe hops and 1 oz of Amarillo hops.

After the boil, quickly cool the wort to around 68°F (20°C) using a wort chiller or an ice bath.

Cool the Wort

Transfer the cooled wort to a sanitized fermentation vessel, and pitch the American Ale yeast.

Pitch the Yeast

Seal the fermentation vessel with an airlock and let it ferment at around 68°F (20°C) for 1-2 weeks until fermentation is complete.

Ferment

Once fermentation is complete, prepare your bottles and caps by sanitizing them.

Prepare for Bottling

Transfer the beer into bottles, leaving about an inch of headspace at the top. Cap the bottles securely.

Bottle the Beer

Let the bottles condition at room temperature for about 1-2 weeks before refrigerating. Your NE IPA is now ready to be enjoyed!
