Heat 5 gallons of filtered water to 165°F (74°C) in a large brew kettle. Add the pale malt and crystal malt to the water and stir well.

Prepare the Mash

Maintain the mash temperature at 152°F (67°C) for 60 minutes, stirring occasionally.

Steep the Grains

After 60 minutes, drain the wort from the grains into a separate kettle, sparging with additional water to collect around 6-7 gallons of wort.

Bring the wort to a boil and add 1 oz of Cascade hops. Boil for 60 minutes.

With 15 minutes remaining in the boil, add 1 oz of Citra hops and 1 oz of Simcoe hops.

Add Flavor Hops

After the boil, cool the wort quickly to about 70°F (21°C) using a wort chiller or an ice bath.

Cool the Wort

Transfer the cooled wort to a sanitized fermenter and pitch 1 packet of American Ale yeast.

Pitch Yeast

Seal the fermenter with an airlock and let it ferment at room temperature for about 2 weeks or until fermentation is complete.

Ferment

Once fermentation is complete, dissolve 3 oz of priming sugar in 2 cups of boiled water and add to the beer before bottling.

Bottle the beer into sanitized bottles and cap them. Let them carbonate for another 1-2 weeks.

If desired, add 1 oz of dry hops after primary fermentation and let it steep for 5-7 days before bottling.
