Cook the Sausages

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sage sausage links and cook for about 8-10 minutes, turning occasionally, until browned and cooked through. Remove the sausages from the skillet and set aside.

Caramelize the Onions and Shallots

In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onions and shallots, and sprinkle with salt and pepper. Cook over medium-low heat, stirring occasionally, for about 15-20 minutes until the onions are caramelized and golden brown.

Add Thyme

Once the onions and shallots are caramelized, add the fresh thyme leaves to the skillet and stir well. Cook for another 1-2 minutes until the thyme is fragrant.

Combine and Serve

Return the cooked sage sausages to the skillet, tossing them with the caramelized onions and shallots. Cook for an additional 2-3 minutes to heat through. Serve warm.
