Duck

BBQ Fig Glaze

Scallion Pancake

Method

Roasting the Duck

1

Prepare the Duck

Preheat your oven to 375°F (190°C). Season the duck with salt and pepper, rubbing it all over. Place it in a roasting pan and drizzle with olive oil.

2

Roast the Duck

Roast the duck in preheated oven for about 1.5 to 2 hours, or until the skin is crispy and the internal temperature reaches 165°F (74°C). Baste occasionally with the drippings.

Making the BBQ Fig Glaze

3

Prepare the Glaze

In a saucepan, combine dried figs, balsamic vinegar, honey, soy sauce, and water. Bring to a boil, then reduce heat and simmer for 15 minutes until thickened. Blend until smooth.

Preparing Peanut-Fried Rice

4

Cook the Fried Rice

In a large skillet, heat vegetable oil over medium heat. Add minced garlic and sauté until fragrant. Push garlic to the side and scramble the eggs until cooked. Add cooked rice, peanuts, soy sauce, and green onions. Stir-fry until heated through.

Making Scallion Pancakes

5

Prepare the Dough

In a bowl, mix flour with enough water to form a dough. Knead until smooth, then let rest for 30 minutes.

6

Cook the Pancakes

Roll out the dough into a thin circle. Sprinkle with salt and chopped scallions, roll up tightly, and spiral into a disk. Flatten and fry in oil over medium heat until golden brown on both sides.
