For the Grilled Monk Fish

Marinate the Monk Fish

In a bowl, mix olive oil, lemon juice, minced garlic, fresh thyme, salt, and black pepper. Add the monk fish fillets and let marinate for at least 30 minutes.

Grill the Monk Fish

Preheat the grill to medium-high heat. Grill the marinated monk fish fillets for about 5-7 minutes on each side or until cooked through and flaky.

Slice the zucchini and bell peppers into strips. Trim the ends of the asparagus.

In a bowl, toss the vegetables with olive oil, salt, and black pepper. Grill the vegetables alongside the monk fish for about 5-10 minutes until tender and slightly charred.
