In a large mixing bowl, combine the all-purpose flour, dashi stock, eggs, and salt. Whisk until smooth and set aside.

In another bowl, mix the chopped cabbage, shrimp, green onions, and grated carrot. Fold this mixture into the batter until well combined.

Cook the Okonomiyaki

Heat a non-stick skillet over medium heat and lightly grease it. Pour half of the batter mixture into the skillet, spreading it into a round shape. Cook for about 4-5 minutes until the bottom is golden brown.

Flip and Cook

Carefully flip the okonomiyaki and cook for an additional 4-5 minutes until the other side is golden and the shrimp are cooked through. Repeat with the remaining batter.

Transfer the cooked okonomiyaki to a plate. Drizzle with okonomiyaki sauce and Kewpie mayonnaise. Sprinkle bonito flakes and aonori on top before serving.
