Leafy Base
Wash and dry greens
Rinse romaine, mixed greens and shredded iceberg under cold water. Use a salad spinner or clean kitchen towel to dry thoroughly so dressings cling. Tear larger leaves (romaine) into bite-sized pieces.
Combine the romaine, mixed baby greens and shredded iceberg in a large chilled bowl. Toss gently to mix and set aside in the refrigerator while you prepare other components.
Fresh Vegetables & Crunch
Prepare vegetables: halve cherry tomatoes, slice cucumber into rounds or half-moons, thinly slice red onion, shred carrots, dice green bell pepper and cut jicama into matchsticks if using.
If using roasted corn from fresh cobs: warm a small skillet over medium-high heat, add 1 teaspoon olive oil, add corn kernels and cook 4–6 minutes until lightly charred. Cool to room temperature before adding to the salad bar.
Prepared Proteins & Add-ins
Grill chicken breast (if using): preheat grill or grill pan over medium-high heat. Brush chicken lightly with 1 tablespoon olive oil, season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Grill 6–8 minutes per side (depending on thickness) until internal temperature reaches 74°C (165°F). Rest 5 minutes and slice thinly.
Dressings & Toppings
Arrange dressings (ranch, balsamic vinaigrette and Caesar) in small bowls or dispensers with spoons or pour spouts. For a simple lemon-olive oil drizzle, whisk together 2 tablespoons olive oil, 1 tablespoon lemon juice, 1/4 teaspoon salt and 1/8 teaspoon black pepper in a small bowl.
Label dressings and place utensils for each topping. Keep dressings chilled and refill as needed during service.
To assemble a salad (example serving): place 2 cups leafy mix into a bowl, top with 1/4 cup cherry tomatoes, 1/4 cup cucumber, 2 tablespoons shredded carrots, 2 tablespoons roasted corn, 2 tablespoons black beans, 2 tablespoons shredded cheddar, 1 hard-boiled egg quarter, 1 tablespoon toasted almonds and 1–2 tablespoons dressing of choice. Finish with a sprinkle of chopped parsley.
Service & Storage
Keep salad components chilled separately until serving. Arrange on the salad bar from coldest (greens) to warmest (if any warm proteins) so temperature-sensitive items stay safe.
Leftovers: store each component in airtight containers in the refrigerator. Use fresh cut vegetables and dressings within 3–4 days; cooked proteins within 3 days. Discard any mixed plates held at room temperature for more than 2 hours.
