Method
Greens & Base
Rinse all greens and radicchio thoroughly under cold water. Spin or pat dry until mostly moisture-free. Chop romaine into bite-sized pieces and shred the iceberg. Combine romaine, mixed salad greens, radicchio and shredded iceberg in a large chilled bowl or in separate shallow pans if assembling a salad bar.
Toss the greens lightly with 1 tablespoon olive oil and a pinch (about 1/4 tsp) of salt to keep them glossy if prepping ahead; refrigerate uncovered for 10–15 minutes before service to avoid wilting from trapped moisture.
Vegetables & Fresh Toppings
Prepare vegetables: halve the cherry tomatoes, peel and slice the cucumber into rounds or half-moons, shred or julienne the carrot, thinly slice the red bell pepper and red onion. If using jalapeño, remove seeds for less heat and slice very thin.
Drain and slice the hearts of palm into 1/4-inch rounds. Pit and slice olives if whole. Arrange each vegetable in its own shallow serving bowl or pan so guests can see and select individually.
Prepared Salads & Proteins
If you haven't prepared the potato salad or quinoa salad yet, make them first and chill: for quick potato salad, toss boiled diced potatoes with a splash of olive oil, red wine vinegar, chopped parsley, diced red onion and salt and pepper. For quinoa salad, combine cooked quinoa with chopped herbs (parsley/cilantro), lemon juice, olive oil, salt and pepper.
Warm or chill proteins as desired: slice grilled chicken breast across the grain into thin strips; arrange sliced roast beef and diced ham cold. Halve or quarter hard‑boiled eggs. Place each protein in its own serving container and label if helpful.
Cheeses & Crunch
Measure and place shredded Parmesan, cubed cheddar, croutons, toasted farofa or breadcrumbs, and sunflower seeds into separate small bowls. Keep crunchy toppings covered until service to maintain crispness.
Dressings & Condiments
Make the creamy cilantro-lime dressing (if not store-bought): in a blender combine 1/2 cup mayonnaise or plain yogurt, 1/4 cup fresh cilantro leaves, juice of 1 lime, 1 small garlic clove, 1–2 tsp honey (optional), salt and pepper to taste and 2–3 tablespoons water to thin. Blend until smooth and refrigerate.
Whisk a quick balsamic vinaigrette by combining 1/2 cup olive oil, 1/4 cup balsamic vinegar, 1 tablespoon Dijon mustard (optional), 1 teaspoon honey, 1/2 teaspoon salt and 1/4 teaspoon black pepper until emulsified. Transfer dressings to serving cruets or squeeze bottles and chill until service.
Arrange remaining condiments (extra olive oil, red wine vinegar, lemon wedges, salt and pepper) near the dressings so guests can finish their salads to taste.
Assembly & Service
Set up
Arrange all bowls and pans on a long, chilled counter or buffet table in logical order: greens first, then vegetables, prepared salads, proteins, cheeses/crunch, and finally dressings & condiments. Use small serving utensils for each item to prevent cross‑contamination.
Portioning for guests
Provide tongs and ladles so guests can compose salads: start with 2–3 cups of mixed greens per serving, then add vegetables, 1/4–1/2 cup of a prepared salad or protein, 1–2 tablespoons cheeses and crunchy toppings, and finish with 1–2 tablespoons dressing or to taste.
Garnish suggestion: offer lemon wedges and a sprinkle of freshly ground black pepper at the end station. Replenish items as needed and keep cold foods on ice or in refrigerated pans to maintain safety.
