Rinse and dry the mixed greens thoroughly using a salad spinner or clean kitchen towel. Place the greens in a large salad bowl.

Add the thinly sliced cucumber and halved cherry tomatoes to the bowl, spreading them evenly over the greens.

Scatter the very thinly sliced red onion over the salad.

Add the crumbled feta and toasted chopped walnuts on top, reserving a small handful of walnuts for garnish if desired.

Simple Lemon Vinaigrette

Whisk the dressing

In a small bowl or jar, combine the lemon juice, minced garlic, Dijon mustard, honey (or maple syrup), salt, and pepper. Whisk or shake to blend.

Slowly drizzle in the extra-virgin olive oil while whisking constantly to emulsify the vinaigrette. Taste and adjust seasoning: add more salt, pepper, or lemon if desired.

If making ahead, cover and refrigerate. Bring to room temperature and re-whisk or shake before using.

Assemble and Serve

Just before serving, drizzle about 3–4 tablespoons of the lemon vinaigrette over the salad (adjust amount to taste).

Toss the salad gently but thoroughly to coat all ingredients with dressing. If using avocado or grilled chicken/quinoa, fold them in gently now.

Taste and adjust: add more vinaigrette, salt, or pepper if needed. Garnish with the reserved walnuts.
