Prep the chicken
Trim any excess fat from the chicken thighs and pat them dry with paper towels. Cut into 1 to 1 1/2-inch pieces for quick cooking.
In a medium bowl combine 2 tbs soy sauce, 1 tbs rice vinegar, 2 tbs honey, 1 tbs gochujang (or sriracha), 1 tsp grated ginger, 2 minced garlic cloves, 1 tsp sesame oil, 1 tsp salt and 1 tsp black pepper. Whisk until honey is dissolved and mixture is uniform.
Add the cut chicken to the marinade, toss to coat thoroughly, then refrigerate for at least 20 minutes and up to 2 hours. If short on time, marinate 10–15 minutes while you prepare the sauce.
About 10 minutes before cooking, sprinkle 1 tbs cornstarch over the marinated chicken and toss to coat. This light dusting helps develop a glossy, slightly thickened coating when seared.
Sweet & Spicy Sauce
In a small bowl combine 1 tbs water, 2 tbs brown sugar, 1 tbs rice vinegar, 1 tbs soy sauce, 1 tsp gochujang (or chili garlic sauce) and 1 tsp hoisin (optional). Whisk until sugar dissolves and ingredients are well combined.
In a separate tiny bowl make a cornstarch slurry by stirring 1 tsp cornstarch into 1 tsp cold water until smooth. Set both the sauce and slurry aside near the stove.
Heat a large skillet or nonstick wok over medium-high heat and add 1 tbs neutral oil. When oil shimmers, add the chicken in a single layer (work in batches if necessary to avoid crowding). Let sear undisturbed 2–3 minutes to develop a golden crust, then stir and cook another 2 minutes until mostly cooked through (internal temp ~160°F/71°C for thighs).
Pour the pre-mixed sweet & spicy sauce over the chicken. Bring to a simmer and after 30 seconds stir in the cornstarch slurry. Continue to cook 1–2 minutes, stirring, until sauce thickens to a glossy coating that clings to the chicken. Taste and adjust heat/sweetness: add a pinch more gochujang or a splash of vinegar as desired.
Stir in the sliced green onions and 1 tsp toasted sesame seeds, then remove from heat. If you reserved any pan juices while batch-cooking, return all chicken to the pan and toss to coat evenly in the sauce.
To Serve
Divide steamed rice between two plates (2 cups total yields ~2 servings). Top with the sauced chicken and spoon any extra sauce from the pan over the rice.
Serve with steamed broccoli or mixed vegetables on the side and garnish with extra green onions, sesame seeds, and lime wedges if using. Let rest 2 minutes, then serve hot.
