Prep steaks

Remove steaks from the refrigerator 30–40 minutes before cooking so they come to room temperature. Pat each steak dry on both sides with paper towels.

Season

Evenly season both sides of each steak with kosher salt, freshly ground black pepper, and garlic powder. Press the seasonings lightly so they adhere.

Cooking fat & Finish

Heat pan

Place a heavy skillet (cast iron preferred) over medium-high heat until very hot, about 3–5 minutes. Add the olive oil and swirl to coat the bottom of the pan.

Sear steaks

Add steaks to the hot skillet in a single layer without crowding. Sear undisturbed 2.5–3 minutes on the first side until a deep brown crust forms. Flip and sear the second side 2–3 minutes for medium-rare (internal temp 130–135°F / 54–57°C). Adjust time ±1 minute for desired doneness.

Add butter & baste

Reduce heat to medium. Push steaks to the side, add butter to the pan and let it melt. Tilt the pan slightly and spoon the melted butter over the steaks for 30–60 seconds to baste and build flavor.

Rest & top with Parmesan

Transfer steaks to a warm plate or cutting board. Immediately, while steaks are hot, sprinkle about 3/4 oz (approx. half of the grated Parmesan) evenly over each steak so it begins to warm and melt. Tent loosely with foil and let rest 5–7 minutes; residual heat will gently finish cooking and further soften the cheese.

Plate & garnish

After resting, if needed press remaining Parmesan onto the top of steaks so a thin layer adheres. Sprinkle chopped parsley if using and serve with lemon wedges on the side for those who want a bright squeeze.
