Prepare fruit
Wash all fruit thoroughly. Hull and quarter the strawberries. Halve the grapes. Peel and core the pineapple and cut into 1/2-inch chunks if using fresh (or drain canned). Peel and slice the kiwi. Peel, dice the mango into 1/2-inch pieces. Slice the banana just before combining to avoid excessive browning. Keep blueberries whole.
Place all prepared fruit in a large mixing bowl. Gently toss with a silicone spatula or large spoon to combine, being careful not to mash softer fruit like berries and bananas.
Dressing & Finish
Make dressing
In a small bowl, whisk together the fresh lime juice, fresh orange juice and honey (or agave) until the honey is fully dissolved. Stir in the finely grated lime zest, a pinch of sea salt and the chopped fresh mint.
Pour the dressing evenly over the bowl of fruit. Using a soft spatula, gently fold the dressing through the fruit until just coated.
If using, sprinkle the toasted coconut flakes over the top and give one very light toss to distribute.
Taste and adjust: add an extra teaspoon of honey if you prefer sweeter, or a squeeze more lime if you prefer tarter. Serve immediately or chill for 30–60 minutes to allow flavors to meld. If refrigerating longer than 1 hour, add the banana slices just before serving to keep them from darkening.
