Prepare greens

Wash all lettuces and greens thoroughly in cold water. Spin or pat dry until mostly moisture-free to prevent soggy salad. Chop romaine and shred iceberg into bite-size pieces. Combine romaine, baby spinach, mixed greens and iceberg in a large chilled bowl or divide between serving pans.

Vegetable Toppings

Prepare vegetables: halve grape tomatoes, peel and slice cucumber, thinly slice red onion and radishes, julienne bell peppers, and shred carrots if not pre-shredded. Blanch corn if using fresh — cut kernels from cob after cooking and cool. Place each vegetable into its own small bowl or pan for the salad bar so guests can compose plates.

For marinated artichokes and olives, drain excess marinade or oil and place in small bowls with serving utensils.

Proteins & Salads

Prepare proteins: grill chicken breasts seasoned with salt and pepper until internal temperature reaches 74°C (165°F), rest 5 minutes, then slice thinly. Hard-boil eggs: place eggs in a pot of cold water, bring to a boil, then simmer 10 minutes; cool in ice bath and halve. Rinse and drain black beans and chickpeas. Prepare tuna salad lightly dressed (tuna, light mayo or yogurt, a squeeze of lemon, salt and pepper) and place in a small serving dish.

Arrange proteins in separate bowls or pans (sliced chicken, halved eggs, beans, chickpeas, bacon bits and tuna salad) with serving spoons/tongs.

Cheeses & Crunch

Crumble feta, shave Parmesan, cube cheddar and toast sunflower seeds in a dry skillet over medium heat for 3–4 minutes until fragrant. Place cheeses, croutons and seeds in separate containers for easy access.

Fruits & Extras

Slice strawberries and dice avocado just before service to prevent browning. Put dried cranberries and strawberries in bowls. Keep avocado in a small bowl with a squeeze of lemon and cover tightly; add to the bar right before guests arrive or offer separately to be added to plates.

Dressings (makes several options)

Classic vinaigrette (about 1 cup)

Whisk together 3/4 cup extra-virgin olive oil, 1/4 cup red wine vinegar, 1 teaspoon Dijon mustard, 1 small clove garlic minced, 1/2 teaspoon salt and 1/4 teaspoon black pepper. Taste and adjust seasoning. Transfer to a pour bottle or bowl with ladle.

Creamy ranch (about 1 cup)

Combine 3/4 cup mayonnaise (or 1/2 cup mayo + 1/4 cup plain yogurt), 1/4 cup buttermilk (or milk), 1 teaspoon dried dill, 1 teaspoon dried parsley, 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, salt and pepper to taste. Whisk until smooth and refrigerate until service.

Balsamic reduction

Simmer 1/2 cup balsamic vinegar in a small saucepan over medium-low heat until reduced to about 1/4 cup and syrupy (8–12 minutes). Cool and transfer to a squeeze bottle for drizzling.

Provide extra olive oil, lemon wedges, and salt & pepper at the bar for simple finishing options.

Assembly & Service

Set out the base greens in the largest pan(s) first. Surround with smaller bowls/pans containing vegetables, proteins, cheeses, fruits, and crunchy toppings so guests can move down the line and compose salads. Keep dressings labeled and in easy-to-use containers. Use chilled pans for perishable items or replenish frequently to maintain freshness.

Garnish pans with chopped parsley and torn basil for aroma and color. Keep avocados and sliced strawberries refrigerated and add to the bar within 30 minutes of service to preserve quality.

Suggest portion guide: about 2–3 cups of mixed greens per serving and 3–4 topping choices (2–4 tablespoons each) plus 2–3 ounces of protein for a balanced plate.
