Prepare & Muddle

    Trim and cut limes

    Roll the whole limes on the counter with palm pressure to loosen juice. Cut both limes into 6-8 wedges (or into half-moons if preferred). Reserve two lime slices for garnish.

    Muddle sugar, lime, and mint

    In a sturdy highball glass or a cocktail shaker, add the granulated sugar and the lime wedges. Add the fresh mint leaves (keep some smaller leaves whole for garnish). Using a muddler or the back of a wooden spoon, press and twist gently about 8–10 times until the sugar is dissolved and the lime releases its juice and oils from the mint. Avoid over-muddling the mint (which can make it bitter); press just until fragrant.

Build the Cocktail

    Add rum and ice

    Add the white rum to the glass with the muddled mixture. Fill the glass about two-thirds with crushed ice or ice cubes (about 1 cup).

    Top with soda

    Pour the club soda over the ice to top the drink (approximately 6 oz). If you used granulated sugar and want a sweeter drink, add 0.5 oz simple syrup now instead of the sugar earlier; stir to combine. If using optional bitters, add 1–2 dashes on top.

    Stir gently

    Use a long spoon or bar spoon to fold the mixture from bottom to top 6–8 times to evenly distribute lime, mint, rum, and soda without bruising the mint further.

Garnish & Serve

    Top with the reserved mint sprigs and lime wheels. Optionally slap the mint sprig between your palms once and place the sprig on top to release aroma. Serve immediately with a straw or stirrer.
