Add 1 tablespoon kosher salt to the pot. Bring the water to a gentle boil over high heat, then reduce to a simmer. Cook until the potatoes are very tender and a fork passes through easily, 12–18 minutes depending on cube size.

Warm milk, cream and butter
While the potatoes are cooking, combine 1 cup whole milk, 1/2 cup heavy cream, and 4 tablespoons unsalted butter in a small saucepan. Warm over low heat until the butter is melted and the mixture is hot but not boiling (around 140–160°F / warm to the touch). Keeping dairy warm prevents cooling the potatoes and helps produce a silky texture.

If using cream cheese, cut 2 ounces into small pieces so it melts quickly when added.

Whip potatoes
Using a potato ricer or food mill, press the drained potatoes back into the warm pot or into a large mixing bowl. If you prefer a very silk-smooth puree, use a food mill or pass through a fine ricer. For a whipped texture, use an electric hand mixer or stand mixer fitted with the paddle attachment on low speed.

With the mixer running on low (or immediately after ricing), slowly stream in the warm milk/cream/butter mixture until incorporated and the potatoes reach a creamy, whipped consistency. You may not need the full amount; stop when desired texture is reached. If using cream cheese, add the small pieces at this stage and beat until fully melted and incorporated.

Taste and season with 1 teaspoon fine sea salt and 1/2 teaspoon freshly ground black pepper. Adjust salt and pepper to taste. If the puree seems too thick, add up to 2 tablespoons additional warm milk, one tablespoon at a time, until desired consistency is achieved.
Finish & Serve

Transfer the pure de batata to a warmed serving bowl. Smooth the top with a spatula and optionally dot with a small pat of butter for shine.

Garnish with 1 tablespoon chopped fresh chives if desired and serve immediately while hot.
