Peel the bananas and slice them on the diagonal into 1/2-inch thick pieces. If serving whole halves, slice lengthwise instead. Pat slices briefly with a paper towel to remove excess moisture.

Measure out butter, sugars, cinnamon, vanilla, lemon juice and a pinch of salt so they're ready at the stove.

Cook the glaze and bananas

Melt butter and form caramel

Place a large nonstick skillet over medium heat. Add the unsalted butter and let it melt until foaming but not browned, about 30–45 seconds.

Add sugars and cinnamon

Stir in the light brown sugar, granulated sugar, and ground cinnamon. Reduce heat to medium-low and cook, stirring frequently, until the sugar melts and the mixture becomes a glossy syrup, about 1–2 minutes. Be careful not to let it burn.

Flavor the glaze

Remove the pan briefly from the heat and stir in the vanilla extract, lemon juice, and a pinch of salt. Return to low heat and stir to combine. The lemon juice brightens the flavor and prevents the sugar from becoming overly cloying.

Cook the banana slices

Arrange the banana slices in a single layer in the skillet. Cook undisturbed for 1 to 1½ minutes until the undersides are lightly browned. Gently flip each slice with a spatula or tongs and cook the other side 45–60 seconds until golden and warmed through. If using banana halves, cook 2–3 minutes per side. Spoon the glaze over the bananas as they cook so they become evenly coated.

If the glaze thickens too much, add 1–2 teaspoons of water (or a splash of orange juice) and stir to loosen to a pourable consistency. Taste and adjust: add a touch more cinnamon or a small pinch of salt if needed.

Finish & serve

Transfer the glazed bananas to a serving plate. Spoon any remaining glaze from the pan over the top.

If desired, drizzle 1–2 teaspoons of maple syrup or honey over the bananas, sprinkle with toasted chopped nuts, and serve with a scoop of vanilla ice cream or a dollop of Greek yogurt. Garnish with fresh mint leaves.

Serve immediately while warm. Leftovers can be refrigerated in an airtight container for up to 2 days—reheat gently in a skillet or microwave and stir to reincorporate sauce before serving.
